In many cases, this just includes a simple thank you and a shake of hands. In other, more social thank yous, the person thanking the veteran might ask about which military branch they were in or if they ever deployed and what their experiences were in the military.
In some rare and uncomfortable cases, a civilian will try to go too far out of their way to thank a veteran for their service.
